SPUMANTE - BRUT NATURE – MILLESIMATO
Dosage: Brut nature / pas dosè / zero dosage.
Aging on its yeasts: 36 months.
GRAPE VARIETAL: Verdicchio.
CULTIVATION SYSTEM: Guyot.
PLANTING DATE: 1991/2009
SOIL TYPE: Calcareous, sandy, clayey.
EXPOSURE: Southwest.
VINEYARD YIELD: 1,5 Kg/plant.
HARVESTING METHOD: Grapes are picked by hand and collected in boxes; selection takes place in the vineyard.
VINIFICATION: Soft pressing and vacuum pressing of the whole bunch, with extraction of only the must flower. Must is cold cleaned. The wine undergoes alcoholic fermentation and is aged in steel casks. A second fermentation takes place in bottles Sur Lattes in a controlled environment.
ALCOHOLIC CONTENT: 12% vol.
PAIRINGS: Excellent throughall courses of the meal, it is ideal with all types of shellfish, mollusks, and raw seafood.
SERVING TEMPERATURE: 10 °C.
TASTING NOTES:
Color: straw yellow with greenish highlights.
Perlage: an intense and persistent crown, with chains of fine, elegant bubbles.
Nose: white flowers and hawthorn, slightly fruity, with light notes of bread crust.
Mouth: The taste opens with a marked acidity, shows exceptional fullnessin the middle, and finishes strongly with good salinity.
Afternose: hints of fruit, hawthorn,and bread crust.
