VERDICCHIO DEI CASTELLI DI JESI D.O.C. CLASSICO SUPERIORE

The name Il Pojo derives from the word “poggio”, in the local dialect, and means “knoll”.It is our select wine, the product of choice grapes and terroir within the portion of vineyard that is located in Contrada Salmagina.

VINE: Verdicchio.
TYPE OF CULTIVATION SYSTEM: Guyot.
VARIETY: R2 and enhancement of old Staffolo clones.
PLANTING DATE: 1991
TYPE OF SOIL: Calcareous, Sand, Clayey.
EXPOSURE OF VINEYARDS: Southwestern.
YIELD IN VINEYARD: 1-1,5 Kg/plants.
HARVESTING METHOD: Morning harvest, by hand, into crates with grapes selected in vineyard.
VINIFICATION: Gentle pressing, static, cold decantation of the first must and fermentation at controlled temperatures with selected yeasts. Subsequent refinement sur lies.
ALCOHOL CONTENT: 14% vol.
PAIRING: With rich fish dishes, flavorful first courses, traditional white meats, fresh cheeses..
SERVING TEMPERATURE: 12-14 °C.

Color:
Straw yellow with greenish highlights and a strongly accentuated visual density.
Nose: The wine immediately expresses its floral notes (both white and yellow), including acacia, almond and a variety of others. These sensations are joined by a slightly spicy, pleasing aroma that adds even more to its complexity and balance.
Taste: The wine opens softly, without sugars, showing an acidic component that fills the mouth and is balanced by a certain roundness. Long, persistent spicy and floral notes linger through the aftertaste.
